Mario's Spaghetti

Ingredients
- 1 lb linguini, cooked al dente
- 1/4 lb butter
- 1/4 lb lean salt pork, cut into niblets
- 1 dash white vinegar
- 1/4 C beef broth
- 4 egg yolks, slightly beaten
- 4 T Parmesan cheese, grated
- 1/4 C cream
Instructions
- Braise the salt pork into the butter until chewy, then add the white vinegar.
- Toss the linguini in the pork mixture.
- Add, in order, the beef broth, the egg yolks, the cheese, and the cream, tossing continuously.
- Plate and serve.
